To make flour, you first need a grain of wheat. From this seed, clean, husked and milled, the base of Italian kitchen was born: durum wheat flour.
We always suggest to our customers an excellent mix of wheat, since not all wheat is the same. A good mix always contains a big percentage of Canadian wheat (the most nutrient in the world so far) and a dose of Italian wheat. But flour can be also wheat flour, cornmeal, vegetable flour and white rice flour. We have also been producing pasta with special flour, gluten free pasta for instance, according to the growing request of the world market.
